We got a grill. WE GOT A GRILL! 

Over the last two years, I've slowly but steadily growing a list of "things I'll make when we get a grill," but we held out, looking for a good deal. And, after two years of waiting? Not once did we spot a grill on sale that was also a grill we wanted. But earlier this month, we finally got a grill off of Craigslist -- a steal, really. 

And oh have we been grilling. Chicken. Sausages. Fish for tacos. Even brussels sprouts. This Peach-Jalapeño Grilled Chicken is one of the highlights for me so far, something that I started working on B.G. (before grill 😏) but couldn’t get quite right until we had a grill. Nothing like cooking over an open flame! 

I have been super crazy for peaches lately, gobbling them up fresh every day. This recipe uses peach preserves, so you can make it any time of year, though if it is peach season, fresh grilled peaches make for a sweet side. Jalapeños add some zing, along with a bit of fresh ginger. It's a sticky, spicy, sweet, savory combo that screams summer, Perfect with a side salad or grilled veggies. 

(And, it’s fast to make and EASY. If you know how to stir, you can make this glaze — because that’s all you have to do, stir it together. 🙌)

Peach-Jalapeño Grilled Chicken

Ingredients:

  • 1/2 cup peach preserves
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1-1/2 teaspoon freshly grated ginger
  • 1 clove garlic, minced
  • 1 jalapeño, minced
  • 1 pound chicken breasts (about 2 large breasts)
  • For serving: 1-2 peaches, cilantro for garnish, lime wedges, fresh jalapeño slices

  • Directions:

    1. Whisk together the peach preserves, soy sauce, rice vinegar, ginger, garlic, and jalapeño in the bottom of a medium-sized mixing bowl.
    2. Place chicken in the bowl with the sauce, and turn to coat.
    3. Heat grill with a medium-high flame. When the grill is hot, place the chicken on the grate and close the lid. Allow the chicken to cook for 3 minutes with out moving to get good sear marks. Then, flip to the second side.
    4. Cook chicken breasts until they reach an internal temperature of 165°F or the juices run clear.
    5. If serving with grilled peaches: slice peaches in half and remove the pit. Lightly oil the fleshy side of each peach (use a high-heat oil such as coconut) and place on the grill. Grill for 4-5 minutes, undisturbed.
    6. Remove chicken from heat, and sprinkle with cilantro. Serve hot with lime wedges and fresh jalapeño slices.

    Raspberry Pistachio Fool (Sweetened with honey!)

    A simple dessert such as this one hardly needs a full blog post to go with it — soft folds of whipped cream, fresh raspberries accentuated with just a touch of honey and lemon, bits of slightly salty pistachio. That ingredients list alone will do. 🤤

    A “fool” is a British dessert where puréed fruit is layered with custard or whipped cream. This version used whipped cream, which is lighter and pairs well with fresh raspberry, which are sweet and delicate at their peak.

    The raspberry bush I planted last year is producing it’s first round of berries right now (a miracle really, because the backyard is basically a jungle of weeds). There are only a few berries and they’re not quite ripe yet, so I used store bought for this recipe. In a pinch, frozen berries would work — just thaw the berries before macerating.

    And — I’m all for dessert-for-breakfast, so if you're looking for something you could eat in the morning, you could swamp the whipped cream in this recipe for your favorite Greek yogurt and make a parfait.

    Pistachios add a nice crunch to this fool, which is otherwise all fluff and fruit. You could really use any type of nut, but I like the flavor of pistachio with raspberry and whipped cream, and also love the way the color pops!

    And now, onwards, because there’s really nothing better than tasting this one for yourself.

    Raspberry Pistachio Fool (Sweetened with honey!)

    Ingredients:

  • 10 ounces fresh raspberries
  • 1 tablespoon lemon juice
  • 2-3 teaspoons honey, divided
  • 1/2 teaspoon vanilla
  • 1 cup heavy whipping cream
  • 1/4 cup crushed pistachios

  • Directions:

    1. In a small bowl, combine 8 ounces of raspberries with lemon juice and 1 teaspoon honey. Set remaining raspberries aside. Using a fork, mash the 8 ounces of raspberries with the lemon and honey. The mixture should resemble a jam or compote. Set aside.
    2. In a second mixing bowl, whip cream to soft peaks using an electric mixer. Add in vanilla and 1-2 teaspoons of honey, depending on your tastes, and continue to whip cream for another minute to incorporate.
    3. In three serving glasses or bowls make alternating layers of whipped cream and the raspberry mixture. Place reserved fresh raspberries on top, and sprinkle with crusted pistachios. Serve immediately.

    There are days I plan dinner from the moment I wake up. The way the ingredients will feel as I chop them, the way they all come together, and the way they'll taste when finally on my fork. And then there are the days when I have no plan at all. On our drive home Oliver asks, "What’s for dinner?" and it catches me by surprise as if I didn’t know dinner was happening that day. I find this happens the most when I’m busy, the days I have the least time to day dream about recipes.

    These are always the days I can’t fit a grocery run in. Instead, I focus on one ingredient that I know we have. In this case, it was frozen mahi-mahi fillets. Then, with mahi-mahi as the muse, I brainstorm recipes. Fish tacos? But we don’t have tortillas. Or salsa. Or cheese. Fish curry? When was the last time I bought coconut milk? Coconut. I have coconut, I thought as I remembered the pink bag of coconut buried with other baking supplies in the pantry.

    This is how the pieces fall together. Sometimes it’s a disaster. Other times it’s happy coincidence, like it was meant to be. Like it had been planned. That’s how I first discovered this meal. A win; happy coincidence. I have since made this quite a few times—even planned on making it several times after the one happy coincidence.

    The toasted coconut on the outside gives the flaky fish a crispy finish, and while you could probably use whatever fruit salsa you want, the citrus from the cara cara oranges cuts through the fish and coconut, balancing out the dish. Avocado brings it all together (like avocado so often does).

    The other wonderful thing about mahi-mahi is that it cooks quite fast — just 10-12 minutes in the oven. And while the oven is doing it’s thing, you can be prepping the salsa. SO while this dinner has an “ooh, wow, pretty” effect on the eyes it’s really not going to take you much time to through together.

    Ingredients:

    • 4 four-ounce fillets mahi-mahi (if frozen, thaw first)
    • 1/2 cup gluten-free flour (try cassava flour, or cup-for-cup gluten-free flour mix)
    • 1/4 teaspoon salt
    • 1/2 cup desiccated shredded coconut
    • 1 egg

    • For the salsa:
    • 2 cara cara oranges
    • 1 avocado
    • Juice of 1 lime
    • 1 jalapeño, minced
    • 1/4 cup cilantro, minced

    Directions:

    1. Preheat the oven to 400°F. Line a baking sheet with parchment. Set pan aside.
    2. Place three bowls on the counter. In the first, whisk flour and salt. In the second, whisk egg until yellow and frothy. In the last, place the coconut.
    3. Coat one fish fillet at a time: first, dip it in the flour, coating all sides. Shake off access. Now, place the fillet in the egg, coating each side in egg and then letting excess drip off. Finally, place the fish in the coconut, flipping it over to coat each side. Now, place fillet on prepared baking sheet.
    4. Repeat step three until each fillet is coated. Then, bake fish for 10-12 minutes, until it is flakey and opaque (check thickest fillet with a fork).
    5. While the fish cooks, prep the salsa: segment oranges (here is a good way to do that). Dice segmented oranges, and place in small mixing bowl. Dice the avocado, and add it to the bowl along with the minced jalapeño and cilantro, and the lime juice. Stir.
    6. To serve: place fish on serving plates (I served over a bed of arugula, for more greens) and spoon salsa over top.
